Sunny Coconut- Curry Soup

Serves 4

2 tbsp peanut oil,
1 onion,
1 clove of garlic,
1 small chilli,
fresh or ground ginger,
1 tbsp Sun’s Kiss blossom-spice blend,
400ml coconut milk,
1/3l chicken stock,
Ayurvedic magic salt (fine)

Brown finely chopped onions, garlic and chilli in a peanut oil, add grated fresh ginger (or ground dried ginger), blossom-spice blend and cook for a few minutes.
Add stock and coconut milk and bring to the boil. Reduce heat and cook on low for approx. 20 min, remove chilli, purée soup and add salt to taste.
Pour soup into bowl and sprinkle with Sun’s Kiss blossom –spice blend.
